Nestled in the heart of Portrush on Northern Irelands stunning Causeway Coast, the Marine and Lawn – Adelphi Hotel will be opening its doors in March 2025, offering a luxurious retreat with elegant design, and world-class hospitality. Our signature restaurant, The Red Sail Room, will serve an exquisite menu inspired by Italian culinary traditions, featuring the freshest local seafood and the finest steaks in town. We are now searching for an exceptional Head Chef to lead our kitchen and create a dining experience that will set the standard for fine dining in the region.

Job Description:

As our Head Chef, you will take the reins of a dynamic and talented kitchen team, bringing your creativity and expertise to craft a menu that combines authentic Italian flavours with the best seasonal ingredients. Your experience with fresh, local seafood, premium cuts of meat, and Italian cooking techniques will be key to delivering a memorable dining experience that will wow our discerning guests. Youll work closely with the front-of-house team and management to ensure exceptional quality, presentation, and consistency, while maintaining a smooth and efficient kitchen operation.

Key Responsibilities:

  • Lead and inspire a skilled kitchen team, producing exceptional dishes that delight our guests with every bite.
  • Create, develop, and continually refine seasonal menus that showcase the best of Italian cuisine, fresh seafood, and premium steaks.
  • Oversee all aspects of food preparation, cooking, and plating to maintain the highest standards of quality and presentation.
  • Ensure strict adherence to health, safety, and hygiene regulations, maintaining an immaculate kitchen environment.
  • Mentor and train junior chefs, creating an environment of continuous learning and growth.
  • Manage kitchen inventory, ordering supplies and ingredients to ensure the freshest and highest quality products are always available.
  • Work with the management team to design exclusive dining experiences, special events, and bespoke menus for our guests.
  • Monitor food costs, manage waste, and ensure efficient use of resources.

Qualifications & Experience:

  • Proven experience as a Head Chef or Executive Chef, ideally within high-end hotel restaurants or fine dining establishments.
  • A passion for and deep knowledge of Italian cuisine, seafood, and premium steaks, with a focus on using the finest local ingredients.
  • Strong leadership skills with the ability to motivate, inspire, and manage a team under pressure.
  • Extensive knowledge of kitchen operations, food safety, and cost control.
  • A creative flair for menu innovation, combined with a respect for traditional culinary techniques.
  • Exceptional organisational and communication skills.
