What you will be doing:
- Working 40 hour week (shifts work) 5 days over 7 days.
- Reporting to the Head Chef and Senior Sous Chef within a strong team.
- To be fully aware of the preparation and service of all dishes on the hotel menus.
- To be prepared to adapt and present dishes according to customer requirements.
- To ensure mis en place is carried out throughout the kitchen to meet forecasted demand.
- To record temperature checks on food and in storage areas as directed to ensure statutory requirements are met and report any variances are rectified immediately.
- Understand and ensure the Food Safety Management System and HACCP are followed to the letter.
- Be the go-to Kitchen Manager for Environmental Health Inspections.
- To assist with the training of and supervise other members of the kitchen brigade.
- To assist with quality control and menu planning where appropriate.
- To be aware of product cost and kitchen gross profit targets.
- To assist with the ordering of food and materials as required following company procedures.
- Take the lead on Stock Controls using the LogOnn system supported by a monthly stock audit with Stock Check UK.
- To be fully aware of and strictly observe Food Safety regulations and requirements.
- Actively share ideas, opinions and suggestions to improve the environment and menus.
- Ensure the consistency in the preparation of all food items for a la carte and/or buffet menus according to property recipes and standards.
- Communicate effectively with the rest of the team and thrive for guest feedback.
- Bringing previous kitchen experience and Food Preparation qualifications, you'll train our chefs, handle stock, order it, and cut down on wastage.
- Naturally, the ability to cook with flair and imagination is paramount.
- Ideally from a hotel background you will have experience of catering for large conference and events including weddings and bespoke private functions. Previous experience in a similar position is essential.

- At least a year under your belt managing a kitchen.
- Ability to work well under pressure in a fast paced environment.
- Ability to work cohesively and collectively as part of a team.
