Role Overview

The Food & Beverage Manager will be responsible for leading all dining, bar, lounge, in-room dining, and event catering operations, ensuring every guest receives an exceptional, luxury-level service experience.

This role demands a highly organised, guest-focused leader with strong commercial awareness and a passion for delivering five-star hospitality.

You will oversee the smooth daily operation of all F&B outlets, maintain impeccable standards, drive revenue, and uphold the hotel's reputation as a premier destination for refined dining and world-class service.

Key Responsibilities

  • Operational Leadership
  • Oversee the daily operation of all hotel F&B venues, including restaurant, bars, lounge, room service, and banqueting.
  • Ensure all service standards, SOPs, and luxury hospitality guidelines are consistently met.
  • Conduct regular floor presence to support teams and engage with guests.
  • Maintain compliance with all health, safety, and food hygiene regulations.
  • Guest Experience & Service Excellence
  • Champion exceptional guest service, ensuring personalised and memorable experiences.
  • Handle VIP requests, guest feedback, and service recovery with discretion and professionalism.
  • Ensure presentation, ambiance, and product quality reflect five-star expectations.
  • Team Management & Development
  • Recruit, train, and lead a high-performing F&B team, including supervisors and venue managers.
  • Provide ongoing coaching, performance management, and leadership development.
  • Foster a positive, motivated working culture built on teamwork and service excellence.
  • Financial & Commercial Management
  • Develop and implement revenue strategies across all outlets.
  • Monitor budgets, payroll, cost controls, waste, and stock management.
  • Analyse sales performance and implement initiatives to maximise profitability.
  • Work closely with sales, events, and finance teams to drive commercial success.
  • Menu & Product Development
  • Collaborate with Executive Chef and bar team on menu creation, pricing, promotions, and seasonal offerings.
  • Ensure product quality, consistency, and alignment with the hotel's luxury brand identity.
  • Oversee beverage lists, wine cellar inventories, and supplier relationships.
  • Events & Banqueting Support
  • Work collaboratively with the Events team to ensure flawless delivery of weddings, conferences, and luxury functions.
  • Attend planning meetings and review event orders for accurate execution.
  • Manage staffing, service flow, and F&B logistics for all events.

Essential Skills & Experience

  • Proven experience as an F&B Manager or senior F&B leader within a luxury, 4- or 5-star hotel environment.
  • Strong leadership, communication, and interpersonal skills.
  • Deep knowledge of food, wines, spirits, and premium dining trends.
  • Excellent organisational and problem‑solving abilities.
  • Demonstrated success in managing budgets and achieving revenue targets.
  • Strong understanding of HACCP, licensing laws, and health & safety practices.
