Previous Butchery Experience Required
Responsibilities:
- Manage & plan daily workflow within the Butchery function, taking into account orders, production workflow and stock levels.
- Manage daily queries regarding the butchery workflow, meat types and quality queries & issues from across the business and become our in-house troubleshooter for these e.g. substitution suggestions for orders & recipes, QA Hold management etc.
- Maintain all Butchery equipment and take responsibility for becoming our in-house troubleshooter for daily issues, escalating to relevant senior managers.
- Monitor and report on Butchery inventory & stock levels including both Butchery Fridges.
- Collaborate with senior management on New Product Development, advising on product suitability, flavour profile and quality.
- Regularly provide training sessions on new & existing products/specs and skill refreshers for Butchery staff and any other team members who express an active interest in the skill.
- Monitor quality assurance and food safety protocols.
- Plan and maintain the Butchery budget alongside senior management.
Requirements:
- Previous Butchery Experience
- Monday to Friday, 8am-5pm + 1 Saturday per month, 4am-1pm (fixed schedule)
- Complete 1 day per month working the early shift (1am-10am). To be arranged at own discretion and in conjunction with the other management staff.
