Your purpose Service standards ● Deputise in the absence of the Food & Beverage Manager. ● Develop a rapport with members by spending plentiful time in each area of the House. ● Ensure the Food and Beverage teams always deliver a warm and engaging service. ● Act as our training lead across each Food and Beverage division. ● Assist in the development of menus with a best in class approach to our offering whilst maintaining the budgeted GP margin percentage. Liaise with the Head Chef on food menu development, with the Bar team on cocktail menu development, with the Head Sommelier on all wine matters and the H19, H20, H21 and Private Parties HODs regarding their specific setup and area of responsibility. ● Ensure departmental Standard Operating Procedures and Steps of Service are updated and followed to ensure the team is equipped with the knowledge to provide excellent service to members and guests. ● Have complete knowledge of facilities, room rates, promotions and hours of operation across the House so that you and the team can positively approach bedroom, room service and F&B outlet sales opportunities. ● Ensure the team positively approach sales opportunities in order to maximise revenue by making informed recommendations based on in-depth knowledge of the menus (including preparation techniques and accompaniments). ● Assist in setting and maintaining correct stock levels, purchasing within budget constraints and oversee the stock management process with Finance and / or the Purchasing department. ● Ensure all guest enquiries and special requests are handled to standard. ● Encourage and respond to guest feedback. Team management ● To manage the team whilst promoting a professional image with a caring and helpful attitude to ensure consistent and continual high service standards. ● To recruit and select excellent team members, ensuring your staff turnover remains in line with Company Key Performance Indicators. ● Assist the Food & Beverage Manager with team development and hold appraisals on OpenBlend at least once per quarter. ● Liaise with the Human Resources team regarding any employee relations issues, in order to ensure compliance with Company policies and employment legislation. Business development ● Assist in the development and communication of a departmental action plan in order to deliver continual improvements, increased revenue and profit. ● Identify ideas and resources that will enable the achievement and surpassing of financial targets. ● Carry out regular competitor analyses to ensure Home House is at the forefront of the sector through its food and beverage offering. Budget control ● Assist the Food & Beverage Manager with management of the operational costs and profitability of the department in order to ensure that revenue and profitability is achieved. ● Assist in managing HODs and their departmental payroll in accordance with the budget. ● Effectively manage our people systems (Fourth, Harri) and ensure rotas are kept up to date according to business levels. ● Ensure accurate financial reporting, including food and beverage revenue management, forecasting and sales opportunities. ● Ensure Micros and Kitchen Cut are accurately administered. ● Manage daily accounting, cash handling and credit procedures, ensuring the team adhere to them at all times.
