What you will do as Pastry Chef de Partie

  • Lead the pastry section, ensuring all products are prepared to the highest culinary and presentation standards.
  • Maintain a clean, organised, and compliant work environment in accordance with hygiene and safety regulations.
  • Monitor and ensure the quality and consistency of dishes throughout preparation and final plating.
  • Train and mentor junior staff to uphold kitchen standards and support team development.
  • Collaborate with the Head Chef to develop new dessert concepts and suggest menu alternatives.
  • Work cooperatively across departments to foster a team-first environment and support smooth operations.
  • Stay informed on seasonal ingredients and new market trends to inspire innovation and freshness.
  • Manage pastry inventory, including ordering, stock rotation, and ingredient quality control.
  • Promote sustainability by minimising food and equipment waste through efficient practices.
  • Implement and uphold all brand standards, including Touches of Hyatt and Food & Beverage Top 20.

Proven experience in culinary operations, demonstrating strong leadership and management skills to oversee and inspire the pastry section. Possess extensive knowledge of pastry techniques and presentation skills.
