The role of Pastry Sous Chef at Fairmont Windsor Park is to supervise day-to-day activities of the Pastry Kitchen, communicate objectives, and assign/schedule work. Communicate and enforce policies and procedures. Manage day-to-day activities of all kitchens including planning and assigning work amongst the team and creating an engaging environment for the team. Motivate employees through recognition, reward, training and development.

Oversee and participate in the preparation of, and check and approve, all example cakes, cookies, desserts, ice creams and other food items prepared in the pastry kitchen. Adhere to all Food Safety management principles. Ensure that all health and safety practices are continually maintained and reported, and that all documentation is correctly filled in and recorded. Manage day-to-day pastry activities, plan and assign work amongst the team and create an engaging environment for the team.

More about you:

  • Proven track record as a pastry chef with at least 5 years experience.
  • Experience of high-volume operations including banqueting.
  • Strong verbal and written communication skills.
  • High food quality standards with a driven and can do attitude.
  • Experience of working with brand standards.
  • Holder of Food Hygiene and Health & Safety certificates.
