The Sous Chef role: As a Banquet Sous Chef, you will hold a key management position within the kitchen department, reporting directly to the Banquet Head Chef. You will be responsible for overseeing all aspects of banquet culinary operations, maintaining the highest standards of quality and consistency, and leading a talented culinary team.
What you will do:
- Supervise daily banquet kitchen operations to ensure quality, consistency, and efficiency.
- Select, train, evaluate, schedule, and coach team members to uphold Four Seasons standards.
- Manage labour and operating costs through effective scheduling, purchasing, and inventory control.
- Work closely with other departments to coordinate event requirements and ensure smooth execution.
- Maintain impeccable hygiene, safety, and cleanliness standards throughout all kitchen areas.
- Ensure menus are current, creative, and aligned with client expectations and seasonal ingredients.
- Participate in regular meetings and tastings to ensure guest satisfaction and continuous improvement.
- Cover other culinary or stewarding duties as needed to support operational flow.
- Be visible during key service times, supporting the team and engaging with guests as required.
- Provide exceptional leadership and foster a positive, team-focused work environment.
What you bring:
- 3β5 years of culinary experience in luxury hotels or fine dining, with a focus on banqueting.
- At least 1β2 years in a management or assistant management position.
- Formal culinary education or equivalent practical experience.
- Advanced culinary knowledge and a passion for excellence.
- Proficient knife skills, plating finesse, and ability to multi-task in a fast-paced environment.
- Strong organisational and communication skills.
- A positive, professional attitude and a collaborative spirit.
- Fluency in English.
