- Schedule staff, both kitchen and dishroom, create daily specials menu.
- Calculate inventory requirements.
- Oversee cleanliness of kitchen, refrigeration, dishroom, and all other kitchen support areas.
- Communicate with front of house staff.
- Order all food and supplies needed, and manage costs.
- Hire, fire, and supervise necessary personnel.
- Ensure compliance with all RI food codes and HACCP laws.
- Ensure wait staff and kitchen staff understand all items for sale each day, and ensure security of kitchen after hours.
- Ensure all items leaving the kitchen are charged for or brought to the Food Service General Kitchen Manager's attention.
- Responsible for kitchen and all support staff during all hours of operation.
Physical/Mental Requirements:
- Continuous walking, talking, bending, and reaching during operating hours.
- Frequently test food to ensure it meets standards.
- Ability to lift up to 25 lbs.
Working Conditions:
