About our Butchery Manager:
We are seeking an experienced butcher to join our team and run our thriving butchery department at Greens of Ellon. We are looking for exceptional colleagues that don’t shy away from a challenge and will constantly go above and beyond to deliver one of the best convenience stores in the country.
Key Responsibilities:
- Supporting in the production and packaging of fresh butchered meat products to retail outlets in the surrounding area.
- Maintain the organization, rotation and cleanliness of back stock areas.
- Effectively complete all aspects of butchery up to and including top level carcass work.
- Ensure both signing execution and pricing accuracy are maintained.
- Prepare, stock, cut, weigh and wrap meat products to a high standard.
- Sausage making skills.
- Ensuring records are kept up to date and compliant with HACCP and Safer Food Better Business standards.
- Ensure proper product handling to control shrinkage and waste.
- Review inventory for product rotation on a daily basis to prevent shrinkage and damages.
- Receive, inspect, and store meat properly upon delivery to ensure meat quality.
- Resolve customer complaints to the full satisfaction of the customer.
- Managing preparation of food products, catering, and special orders.
- Produce and submit receiving records on a timely basis.
- Order meat products according to anticipated sales and seasonal needs.
- Train employees in job responsibilities and safe operating procedures.
- Make regular announcements to inform guests of freshly prepared meat products and current sales.
- Provide exceptional customer service while maintaining a high level of productivity.
- Unload trucks, sort cases for stocking, and inspect merchandise for damage.
- Utilize up-time as the key metric to determine success of the team.
- Planning daily cutting lists and ensuring the team follow and complete these in allotted times.
What do you need?
- Butchery Experience - Minimum 1 year - Full carcass butchery required (Beef/Pork/Lamb) & manufacturing experience required (e.g., sausages, burgers, etc.)
- Food Retail Experience = preferred
- Management Experience
- Health & Safety / First Aid / Food Hygiene
- Great attitude and team working skills = 100%
