At wagamama, we’re an eating house for the soul. With over 165 UK restaurants and growing, our purpose is to nourish the world from bowl to soul, inspired by fast-paced Japanese ramen bars since 1992. We’re looking for a commercial manager to join us on our continuous journey of true nourishment.
The purpose of this role is to define and manage the execution of our in-year commercial plans across restaurants (e.g., pricing and promotion) and our commercial partners outside of restaurants, the primary one being Deliveroo. This role includes developing pricing strategies, monitoring market trends, and working closely with the marketing and finance team to maximise revenue sustainably over time. You will also be involved in budgeting and forecasting revenue, supporting the finance team, and implementing strategies and actions to mitigate risks.
Key Accountabilities:- Lead execution of our out-of-restaurant commercial plan, primarily focusing on delivery and Deliveroo, which represents 20% of our sales, as well as all about foods (our grocery relationship) and other future out-of-restaurant commercial partners.
- Lead forecast of market performance and trend analysis, working with the TRG strategy team to inform finance and the wider business of the best view of the market dynamic and underlying volume and value performance trend, and our baseline forecast for budget and re-forecast cycles.
- Accountable for attributing revenue forecasts for marketing initiatives, ensuring the initiatives' value is worth the effort/resource invested, and reviewing those forecasts post-go live to ensure lessons learned are taken and improvements in accuracy made over time.
- Accountable for setting our pricing strategy (for UK and global markets) and defining the UK price points per dish/drink item.
- Accountable for setting our promotional strategy (for UK and global markets) and defining the promotional plan for UK/Ireland. Forecast expected incremental revenue uplift and follow through on evaluation in partnership with finance of the incremental uplift.
- Support the finance team on the budget cycle, forecasting market and underlying base performance, and providing revenue forecasts for demand generation initiatives that sit beyond restaurant bottom-up forecasts.
- Conduct competitor price scraping on a quarterly basis and competitor price relativity analysis to be completed and shared with the business with implications and actions concluded.
- Partner with the marketing and strategy team on defining pricing for new propositions that deliver a win-win commercial and customer econometrics/attribution where possible.
- Define optimum dish and menu proposition pricing strategy in support of the food and marketing team.
- 3+ years experience in a similar role with proven experience in driving sustainable revenue growth in another business.
