Join the Squadra as Head Chef @ Manchester (NEW OPENING!)~Onboarding in London

For our new venture in Manchester, we are looking for a talentedHead Chefwith the incredible opportunity to begin their journey with a special onboarding at one of our restaurants inLondon .

Theonboarding plan,which lasts 4 months,will include the acquisition of our management tools, the organization and daily management of our brigades, the knowledge of the internal processes of menu changes, the meeting with key figures of the company and the demonstration of how we guarantee the best experience to our customers but above all to our Squadra.

You will report to the General Manager and the Executive Chef UK and and your main responsibilities will be:

Responsible for Quality
OBJ: customer exp ratings 4.7/5.

  • Responsible for the quality, quantity and regularity of dishes at the pass

  • Responsible for the speed of dishes at the pass

  • Collaboration on menu changes, accompanied by the Executive Chef / proposal force on new recipes depending on the season, writing recipe cards, implementing menu changes, training the team / participation in R&D sessions

Responsible for Kitchen Operations
OBJ: Monthly Hygiene score > 90% // Food cost and people cost kitchen in line with budget.

  • Responsible for conformity with hygiene

  • Responsible for the monthly Food Cost / F&B to the budget target

  • Responsible for People Cost in the kitchen / monthly people cost to the budget target.

  • Responsible for team schedules

  • Responsible for respecting equipment in the kitchen

Guarantee of the success of the Squadra
OBJ: Squadra that evolves and becomes more and more autonomous, turnover on target.

  • Validates new hiring to the team / in line with HR recruitment criteria.

  • Responsible for integrating new arrivals into the kitchen / preparation for their arrival, weekly update from the 1st week.

  • Train and support the kitchen team on a daily basis and provide them with vision / pass on knowledge, delegation, strength of proposal for training, talent reviews.

  • Responsible for the good understanding and cohesion of the team integration of dishwashers, team updates.

  • Responsible for monitoring the training of the team

  • Responsible for good understanding between the kitchen / floor / bar

  • Provides at least one weekly service in tandem with Sous-Chefs
