Los Mochis City is seeking an exceptional Pastry Chef de Partie to join our world-class kitchen team. Located on the rooftop of 100 Liverpool Street, our flagship venue offers a stunning 14,000 sq ft dining space with a 3,000 sq ft terrace overlooking the City skyline.

The Role: As Pastry Chef de Partie, you will work closely with the Head Pastry Chef and wider kitchen brigade to craft beautifully presented, flavour-packed desserts that enhance our guest experience. You will have the opportunity to develop your technical pastry skills, contribute to menu development, and ensure consistency and excellence in every dish that leaves the kitchen.
Key Responsibilities:- Assist in the preparation and execution of all pastry dishes, ensuring consistency and quality at all times.
- Work closely with the Head Pastry Chef to develop new and innovative desserts that align with our Mexican-Japanese concept.
- Maintain a high level of organisation in the pastry section, ensuring mise en place is always prepared.
- Uphold strict food hygiene and health & safety standards, ensuring full compliance with HACCP.
- Work efficiently within a fast-paced, high-volume kitchen, meeting service deadlines without compromising on quality.
- Monitor and manage stock levels, minimising waste and ensuring efficient use of ingredients.
- Support and mentor junior pastry chefs, contributing to their development and growth.
- Previous experience as a Pastry Chef de Partie or strong Demi Chef de Partie in a high-quality, fast-paced kitchen.
- A passion for pastry and dessert creation, with a strong eye for detail and presentation.
- Experience with Japanese or Latin American flavours is a bonus, but not essential.
- Solid technical pastry skills, with knowledge of classic and modern techniques.
- Strong organisational abilities, with the ability to work efficiently under pressure.
- Ability to work well as part of a collaborative team while also demonstrating initiative.
- A desire to grow and develop within an ambitious and expanding restaurant group.
