The Peninsula London is excited to announce we are seeking a passionate Senior Wok Chef to join Canton Blue - our Cantonese Restaurant. This role will be responsible for assisting the Executive Chinese Chef in leading, directing and coordinating the daily operations of the Cantonese Kitchen.
On the ground floor, Canton Blue, the hotel's innovative Chinese restaurant, will celebrate the spice-trade union of Asian and British cultures with menus of creative dishes, along with cocktails, and artisanal teas.

Key accountabilities:- Promote The Peninsula London in becoming a recognized culinary destination by creating memorable guest experiences through artistry, communication with customers and uncompromised passion for excellence.
- Deputise in the absence of the Executive Chinese Chef while demonstrating flexibility.
- Ensure personnel, physical and environmental hygiene is maintained in adherence to HACCP, supervise departmental employees grooming daily.
- Develop, motivate, supervise and coach departmental employees in maintaining a culture in compliance with our mission, vision, values, and core HSH principles.
- Minimum of 8 years experience in a 5-star hotel with a Chinese banquet or restaurant.
- Extensive Cantonese food cooking techniques and knowledge with the ability to recognise current culinary trends.
- Extensive experience in managing chefs.
- Fluent English and Cantonese communication proficiency.
