An exciting opportunity has arisen for a talented Head Baker to lead the bakery operation at our grade II listed sourdough bakery in North Norfolk. If you are passionate about bread and viennoiserie, and are ready to showcase your skills, this is the role for you. This role will be responsible for planning, leading, and coordinating the overall production of the bakery kitchen whilst managing and coaching a team of bakers. What’s involved?: Leading and enthusing a team of 2 full-time bakers at various stages of their baking career Maintaining standards of product and developing a new exciting range Keeping up with new developments and trends in baking Building connections and relationships with local suppliers Fulfilling the bakery shop & wholesale bread par levels Rota management for the bakery team Maintaining excellent food hygiene standards Scaling, mixing and shaping dough by hand and manning the ovens Contributing to product development procedures with a good creative attitude Working within set KPI’s to ensure the profitable running of your department inc. wage percentage, GP’s and stocktaking Pastoral care for your team, as their line manager you will be directly responsible for their training, development and in-work (and sometimes out of work) wellbeing.
